Vegan Baked Pasta
Meals are always better shared with friends! That's why, this last week, we collaborated with four of our favourite brands— Sol Cuisine, nuPasta, Vegcheese, and Tonica Kombucha— to create a delicious meal that brings all our strengths together. This recipe was written by @ChefMide on Instagram!
Ingredients
  • Half cup of red, orange, yellow sweet pepper each
  • 1 Onions (chopped)
  • 3 cloves garlic (finely chopped)
  • 1 stalk of fresh rosemary (finely chopped)
  • 2 stalks of fresh thyme (finely chopped)
  • 1 teaspoon Black pepper
  • 1 teaspoon Salt
  • 304g of Sol Cuisine Spicy Black Bean Bites
  • 1 pack of nuPasta Fettucine
  • 300g of It’s Souper West African Pepper Sauce
  • 100g VegCheese Fresh Mozz
  • 2 tablespoons of cooking oil

Instructions  

  1. Heat up cooking oil in a cast iron pot/dutch oven on the stove
  2. Add onions, thyme, rosemary, and garlic. Sauté for 3-5 mins on low heat.
  3. Add It’s souper west African pepper sauce, let it cook for 2mins, add Sol cuisine bites to the sauce. Season with salt and black pepper.
  4. Add chopped sweet peppers gently stir
  5. Add nuPasta (drain all liquid from the pack) and stir until the sauce is evenly mixed.
  6. Top pasta with VegCheese fresh mozzarella
  7. Oven Bake at 400 F for 10 minutes.
  8. Let it cool for 10 minutes before serving

** Enjoy with a bottle or can of Tonica Kombucha (Blueberry Tonica)
